Abstract:
This study was conducted to determine the nutritional composition, and selected heavy metal
contents as well as quantity in the two kolo sample sites, Debre Sina and Dejen districts. The
results of nutritional compostion and selected heavy metal amount were closed to recommend
results of chickpea and barley. The analysis revealed that the nutritional compositions ranged from
11.47±1.20-13.13±1.002%, 2.02±0.98-2.71±1.303 %, 2.19±0.291-2.95±0.655%, 1.200±0.312-
1.333±0.368%, 10.56-12.07% and 61.72-63.92% of moisture, total ash, crude fat, fiber, crude
protein and carbohydrate respectively. Nutritional composition of kolo sample in both study site
in (%) in decreasing order is as follows; carbohydrate >Moisture> protein> oil >ash>fiber. The
findings of this study showed that kolo sample in Debre Sina and Dejen % ash, oil, carbohydrates
and fiber contents were below compared with the previous study result of barley and chickpea. .
Protein contents of the Kolo from the two study areas were also close to the previous study of
chickpea and barley result. When the moisture content of kolo, the study revealed it is above
chickpea and barley result. In selected Heavy metals, the findings show that it has less
concentration in kolo of the two study sites. As per the analysis, the concentration selected heavy
metal ranges from 0.309±0.006-0.046±0.0001 (mg/l), 0.442±0.002-0.136±00012 (mg/l),
0.046±0.0080±0.0002mg/l), 0.098±0.0015-0.006±0.0011 (mg/l) and 0.027±0.0015- 0.0124±
0.0025 (mg/l) of Cr, Mn, Cd, Pb and As respectively. The concentration of Cr, Mn and Cd
were in Dejen higher than Debre Sina While the concentration of As and Pb were lower than Debre
Sina concentration kolo sample. All metal content were close to previous study of barley and
chickpea and below permissible limit.
